Easy One-Pot Beefy Mushroom “Helper”

1 Lb Belcrest Farms Ground Beef

2 C Dry Pasta (Fusilli or Shells recommended)

1 C White Onion, Diced

2 C Brown Mushrooms, Sliced

1/4 C Parsley, Finely Chopped

3-4 Sprigs Fresh Thyme

2 Tbsp Olive Oil

2 Tbsp Butter

1 C Heavy Cream

1 C Shredded Parmesan

2 C Chicken Stock

2 Tbsp Flour

1 Tbsp Just Ranchin’ Seasoning

1 Tbsp Oyster Mushroom Powder (optional)

In a large pan, warm olive oil at medium heat. Add in onions and sauté for 2 mins. Add in ground beef, crumbling thoroughly until well browned. Add in Just Ranchin’ (ranch) seasoning, and mix well. Add mushrooms and cook for 2 mins. Add in butter until melted, then flour and mix well. Add in mushroom powder and stir well. Add in pasta, then chicken stock. Stir well. Add in heavy cream and Parmesan, mixing well until cheese starts to melt, and comes to a gentle boil. Turn down to simmer, add in thyme and half the parsley. Cover with lid, and cook for 20 mins, stirring every 5 mins. Pasta cook time may vary.

Remove lid and stir well, and let sit for a few minutes before serving, to allow sauce to thicken. Remove thyme stems, serve and garnish with more Parmesan and fresh parsley.
