Jalapeño Lime Marinated Skirt Steak

Skirt Steak, that is!

Ingredients:

Belcrest Farms Ranch Raised Skirt Steak

Marinade:

2 Jalapeños, Halved & Seeds Removed

1 Large Lime, Juiced

1/2 C Avocado Oil

2 Tbsp Red Wine Vinegar

2 Tbsp Honey

2 Cloves Fresh Garlic

1/4 C White Onion, Chopped

1 Handful Fresh Cilantro

1 Tsp Cumin

1 Tsp Smoked Paprika

1 Tsp Oregano

Kosher Salt & Pepper To Taste

Combine all ingredients into a blender, and blend until smooth. Place skirt steak into a baking dish and pour the marinade over, covering the entire steak. Flip the steak twice to ensure all of it is thoroughly coated. Cover with foil and allow to rest at room temperature for 20 mins. For more intense flavor, marinade up to 2 hours in the refrigerator, allowing to rest at room temperature for 20 minutes before grilling. Adjust salt and pepper to taste.

Grill steak to preferred wellness. Allow to rest for 5 minutes, slice into strips, cutting against the grain. You can also chop it up for bite-size pieces. Great for tacos, nachos, or a delicious Mexican style steak salad!
