Oktoberfest Sheet Pan Bratwurst

It’s Oktoberfest season! This recipe is a fun spin-off on the traditional German potato salad and red cabbage dishes. Complimented by our delicious bratwurst!

What you’ll need:

8 Belcrest Bratwurst Links, Scored

Potato/Cabbage Medley:

5 Slices Of Bacon, Chopped into small bits

2 C Potatoes, Diced

2 C Red Cabbage, Diced

1/2 C White Onion, Diced

1/4 C Fresh Parsley, Minced

2-3 Tbsp Apple Cider Vinegar

2 Tbsp Stone Ground Mustard

1 1/2 Tsp Sugar

1/2 Tsp Black Pepper

Salt to Taste

Heat oven to 375 F.

In a large mixing bowl, combine all ingredients for the potato cabbage medley, mix well, and set aside.

Chop bacon into small pieces. Add to a large pan and cook until golden and crispy. Remove and drain pieces on a paper towel, reserving the bacon fat. Score your brats across the top and set aside.

Grease a large baking sheet with cooking spray. Pour potato/cabbage mix on the sheet and spread out evenly. Spoon several (3-5) tablespoons of bacon grease on top of the potatoes, and sprinkle bacon bits over the top. Arrange your brats onto the baking sheet, either off to the side, or on top of the potato mix. Cover with foil, sealing all edges tightly. Place in oven and allow to cook for 25-30 mins, until potatoes are tender. 

Once potatoes are tender, remove the foil. Switch oven to Broil setting, allowing the potatoes and brats to brown a bit. Do not overcook.

Serve hot with a side of mustard for dipping,  and enjoy with your favorite German beverage! Prost!
